ahhhh sugar...dodododododo...ahhhh honey, honey...

Here are the sugar substitutions all ye localvores requested.

Honey: 3/4 cup of honey for each cup of granulated sugar, then reduce the liquid in the recipe by 1/4 cup and add 1/4 teaspoon baking soda. Reduce oven temperature by 25 degrees. Honey tends to make things darker and chewier.

Maple Syrup: Substitute 3/4 cup maple syrup plus 1/4 t baking soda for each 1 cup granulated sugar and reduce liquid by 3 tablespoons. Use a lighter grade if you want to avoid a heavy maple flavor.

And a personal tip from me - I often use apple sauce to replace some of the fat and sugar in recipes. If something calls for 1/2 a cup of oil and 1 cup of sugar, for instance, I might substitute 1/4 cup oil. 1/4 cup apple sauce and 1/2 cup sugar. I find that the apple sauce is sufficiently sweet. But then again, I bake like a hippy.
